The variety and variability of olive oil in all its purity

Where it is produced

 

 

The farm is situated in the territory of the town of Canino, in the heart of Maremma.
The origin of this town goes back to the Etruscan age before the foundation of Rome, it was part of the Papal State and belonged to the noble Farnese Family.
Napoleon Bonaparte conquered the area in the XIX century and gave this territory to his brother Luciano appointing him Prince of Canino.

Today Canino and its area is a quiet territory mainly devoted to extra virgin olive oil production and to life enjoyment.   

I&P oil is produced of olives from monoculture olive trees situated in a volcanic area stretching across the municipalities of Canino and Tessennano, both of wich belong to the geographical area of Tuscia in the province of Viterbo. The soil, rich in minerals that are particulary congenial to the olive tree, gives our oil unique aromas with fresh vegetal overtones.

Grand Cru Gioacchina

This oil is produced of olives from 43 centuries-old olive trees (the youngest dating from 200 years ago) found in a small olive grove in lot 84 (foil 34)  in Gioacchina near Canino (Viterbo). The lot is on a rise with eastern exposure. The aerial photograph below shows the area of Canino with the olive grove located in Gioacchina highlighted. There are also photographs of the olive grove showing the individually-numbered olive trees.
The cultivar caninese varietal, native to the Canino area, is characterized by vigorous growth and can reach a height of 12-15 meters with foliage 18-20 meters in diameter. Today, however, it is normally pruned "goblet-shaped" to much more limited dimensions. The oil produced  by the Canino varietal is emerald green with a golden  sheen and a clean flavor deriving from its intense aroma of  fruit and grass and unmistakable spicy note. These characteristics are due to its high concentration of  polyphenols which, in addition to enriching the taste, are also powerful antioxidants. It has also  been said to convey various scents including almonds, pine nuts and walnuts.

Grand Cru Gioacchina Iuvenis

This oil is produced of olives from young monoculture Canino varietal olive trees cultivated in a small olive grove located on the owner's land (lot 84-plate 34) in Gioacchina, municipality of Canino (Viterbo). This oil comes from 175 young olive trees planted out in the year 2000 when two years old. Each tree is registered and cataloged. The trees have been entered in the CANINO DOP olive grove register (dated September 29, 2003). The lot is on a slope with southern exposure.

Grand Cru Musignano

This oil is produced of olives from centuries-old monoculture Canino varietal olive trees grown in an olive grove on the producer’s property (lot 14 – map page 62) in the hamlet of Musignano in the township of Canino (Viterbo). This oil is produced from 62 olive trees over 100 years old and each tree is registered and catalogued. The lot is on a rise with south-western exposure.

Grand Cru Leccino

This oil is produced of olives from young monoculture Leccino varietal olive trees grown in a small olive grove on the producer’s property (lot 84 – map page 34) in the hamlet of Gioacchina in the township of Canino (Viterbo). This oil is produced from 30 olive trees aged 10 years and each tree is registered and catalogued. The trees are registered (dated  September 29, 2003)) in the CANINO D.O.P. Registry. The lot is on a rise with eastern exposure. Probably of Tuscan origin, Leccino is one of the most popular olive varieties in Italy. Its tree, which is of medium-to-large dimensions, has a dense and spreading crown, while its branches have upward reaching tips. The oil, which is golden yellow with a green sheen, is of excellent quality, and has a fresh flavor, not too fruity but slightly bitter and spicy; it has also been said to convey aromatic notes (basil, mint) Belgian endive, lettuce,artichoke and almond.

Cru Poggio Orzale M

This oil is produced of olives from a small olive grove situated on a knoll in Orzale, municipality of Tessennano (Viterbo) with 11 Frantoio varietal olive trees at least 42 years old. This olive grove is situated on a knoll with eastern exposure. Frantoio, from Tuscany, is one of olive cultivars most evenly distributed throughout the country. Its tree is of medium dimensions, strong with a wide, fairly dense crown. Its main branches are knotty, while its fruit-bearing branches are long and slim, with upward reaching tips. It has an early production cycle. Dark-geen oil with a golden sheen, it is of excellent quality: delicate,aromatic,hearty and fruity, with spicy and bitter undertones. It has also been said to convey various scents including fresh grass, sour apple, artichoke, sweet marjoram, rosemary, lettuce, celery and almond.

Cru Tomba Etrusca

This oil is produced  from monoculture Canino variety olives  cultivated in a small olive grove in the hamlet of Tomba Etrusca in the township of Tessennano (Viterbo). The grove is comprised of 16 trees over 70 years in age. This lot is on level ground on a hillside.
