The variety and variability of olive oil in all its purity

Products

The 2011 season, in the Canino and Tessennano area, has been sunny and very dry during the Summer. For these reasons we are expecting high quality and a limited quantity of production.

Pressing

The farm's Alfa Laval AO500 Top mill utilizes a cold-press method with centrifugal extraction. This method greatly reduces the surface area exposed to air oxidation, thus significantly limiting oxidation to safeguard the quality of the oil. A hammer-operated pressing method was used or a disc pressing method.

Organolectic characteristics

Appearance: bright-colored and slightly opaque (because it has not been filtered).
Color: emerald green with golden sheen.
Taste: clean with fruity flavor and decidedly bitter and pungent aftertaste.
Aroma: full, with aroma of fresh olives.

Additional information

We recommend that it be used in limited quantity because even a lesser amount provides the full flavor desired. This also makes it possible to fully enjoy the subtleties of its flavor.

Bottling and packaging

Guarantees 100% UV protection. Following the opening of the can, to prevent air oxidizing the oil thus reducing the level of peroxides), we recommend that it be transferred to smaller containers that also provide UV protection.

750cc and 250cc Bottles
The bottles are made of dark green glass and are 4.5mm thick. They have been specifically designed by the specialist company which supplies them (Vetreria Etrusca) to provide a high UV filtration level (99.6% measured on June 17, 204 by the Venetian glass laboratory, the Stazione Sperimentale del Vetro di Venezia) for UV waves of between 350 and 450nm. This guarantees optimal UV protection (one of olive oil's greatest enemies). In addition, the 250cc bottle significantly reduces oxidation between use. A charge of inert gas (nitrogen) is injected into each bottle to prevent oxidation as long as the bottle remains sealed.

Tools

This year we also offer the Taste-Huile (Oil taster) manufactured by Alessi (a world renowed brand in design houseware). This tool allows you to better taste and enjoy our oils. It is a stainless steel personal oil container designed by Lorenzo Piccione di Pianogrillo and Köbi Wiesendanger for tasting the oil before dripping it on the food.

The three bottle holder is made by plexiglass and it is designed by I&P style department. It allows you to keep on the table three different kinds of our monovarietal oils and to choose the one that better fits the food.
